Two settings get you online when you land: the MTN Travel eSIM on with Roaming switched on, and Mobile data pointed at it. Adding the plan doesn't switch roaming on; only your phone's settings can. On a Samsung, use Turn on data roaming for your plan on Samsung instead.
Do this after you land. At home, the plan shows no service, and that's normal. Your home SIM stays exactly as it is; calls and texts keep using it.
Menu names vary by brand. On Pixel the labels are as above; other brands may show Data roaming and Mobile data preference in a SIM settings screen instead.
Give your phone a minute to connect once you land. Still nothing? Switch on Airplane Mode for 30 seconds, then switch it off again.
Most destinations need no APN. If yours is on this list, add it before you connect:

No APN needed
Enter the value in lowercase with no spaces. On Android: Settings > Network & internet > SIMs > your MTN Travel eSIM > Access Point Names (older versions: Mobile network > Advanced > Access Point Names). If the APN is listed, select it. If not, tap the menu icon, choose New APN, enter any name you'll recognize, enter the value under APN, then save and select it.
